Where does the fire go in a wood fired oven?

The fire is started in the middle of the floor of the oven dome.  Once the fire is established and up to temperature and the oven is fully saturated with heat (about 60 minutes for the Midi) you can use the pizza peel supplied with the oven to move the fire to the side of the inside of the oven.  Cooking is done on the bricks in the space next to the fire.  A comprehensive guide to getting started with your wood fired oven is supplied with every Alfresco Factory oven purchased.
